How To Make

  • Mix all the ingredients into the oversized microwave-safe mug and mix them until you get the smooth batter.

To make this recipe you need ½ cup uncooked quinoa, ¼ cup sweetened coconut flakes, 2 tbsp peanut butter (melted), 1 tbsp coconut oil (melted), ¼ cup maple syrup and ½ tbsp cinnamon.

How To Make

  • Preheat the oven to 350°F. Grease the small baking sheet then put the parchment paper.
  • Soak quinoa in hot water for at least 10 minutes or until it begins to soften, then drain water through a strainer.
  • Take a small bowl and combine coconut flakes, and quinoa until well mixed. Then add in peanut butter and coconut oil, stir it until smooth. Next add cinnamon and maple syrup.
  • Spread the mixture evenly using a spatula, onto a baking sheet in a thin layer. Bake it for 25 minutes until crisp.
  • Let it cool completely. Enjoy on it’s own, or you can use yogurt for topping.
